If you missed meal prep, or you want to pull something together in no time that packs a ton of protein, try making this easy spicy tuna salad. It packs 51g protein and just 500 calories. I scooped it over a hollowed out English cucumber, but you can use lettuce, bell pepper, sourdough, or any type of vessel you wish!

Ingredients:
2 cans tuna (7oz total) in water
2 medium boiled eggs
1/2 jalapeño, finely diced (deseed if you want less heat)
1/4 cup finely diced dill pickles
1/2 small red onion, diced and soaked in water for 10 mins to mellow out the sharp flavor
1 tbsp Dijon mustard
1.5 tbsp mayo
1 tbsp sriracha or hot sauce
Salt & pepper to taste
1 English cucumber
1 tsp sesame seeds & chipotle hot sauce for garnish

OK, you guys know that I love a good TikTok trend, and this one is excellent! This is my third time making @logansfewd shaken cucumbers, and each time the recipes get better and better. 🙌🏼
Try out this Asian salmon version, using canned smoked salmon or tuna. 

Worth the hype people! 🙌🏼🥒

What you’ll need: 👩🏻‍🍳 
* 1 English cucumber
* 1 can of smoked salmon or tuna
* 1 1/2 tbsp of soy sauce
* 1/4 of an avocado, roughly chopped
* 1 tsp kewpie mayo (Japanese mayonnaise)
* 1 tsp chilli oil with crunchy garlic, not spicy (I use S&B Umami topping, linked in my Amazon storefront)
* 1 tsp momofuku chilli crunch 🥵🌶️
* Furikake seasoning
* Toasted sesame seeds
