These s’mores rice cakes are one of my fave treats, and they look like little eclipses hehe Just take a rice cake and put it on a piece of parchment paper, top it with some marshmallow fluff, and then melt your chocolate of choice and cover the top of the rice cake. Finish with some flaked sea salt (or add sprinkles, crushed nuts, etc), and then refrigerate for at least 30 min until hardened. I am so obsessed with this healthy chocolate snack. You can even make several of them and freeze them for later!
