Sauce:
1 tsp @naturescharm vegan fish sauce
2 tbsp smooth peanut butter
2 tbsp tamari sauce (or soy sauce)
1 tbsp mirin (or rice vinegar)
1 tbsp brown sugar
2 tsp cornflour/starch
2 tbsp water
1 tbsp minced ginger
2 garlic cloves, minced

Tofu:
300g firm tofu
1 tbsp corn flour
Pinch of salt and pepper
Cooking oil

Other:
Steamed rice
200g frozen edamame beans, boiled
2 spring onion shoots, sliced

Chickpeas:
2 cups canned chickpeas, drained and rinsed
Drizzle of olive oil
1 tsp onion powder
1 tsp garlic powder
1 tsp cumin
1 tsp smoked paprika
Pinch of salt and pepper

Cauliflower:
1 head of cauliflower cut into smaller pieces
Drizzle of olive oil
1 tsp onion powder
1 tsp cumin
1 tsp smoked paprika
Pinch of salt and pepper

Tabouli style salad:
1 bunch curly parsley, finely chopped (about 2 cups)
1/2 red onion, finely diced
1-2 tomatoes, finely diced
