So we decided to share her Thepla recipe which she's been following for about two decades and while I can't roll those theplas like she does. Theplas 

3 Green chilies 
1 inch Ginger
Pound it into a paste

1/2 bunch Methi, chopped & washed 
1 tbsp Ginger & chili paste 
15g Jaggery 
1 tsp Red chili powder

This recipe will make 15-20 Theplas 

Ingredients 

1 1/2 cup whole wheat flour 
1/4 cup besan / gram flour
1 tbsp oil 
1/2 tsp hing/ asafoetida 
1 tsp jeera/ Cumin 
Salt to taste
2 Chopped green Chillies
1tbsp minced ginger 
1/2 tsp turmeric powder
1 tsp coriander powder 
1 tsp kashmiri Lal mirch
1/2 tsp aamchur powder 
100gms Chopped methi/ fresh fenugreek
2 tbsp dry kasuri Methi 
1/2 cup curd 
Use room temperature water for kneading if needed.
Ghee for cooking the thepla. 

Method 

In a bowl seive whole wheat flour & besan. Add all the dry Ingredients and mix well. Then add the fresh Methi & mix it.
