INGREDIENTS (Serves 2)
Extra virgin olive oil
2 cloves garlic, minced
2 medium zucchini, roughly chopped
500g (17.6 oz) tin of cooked chickpeas, and their stock (swap for a splash of veggie stock)
2 slices of toasted sourdough
Dressing
Small bunch of fresh basil, chopped
Juice of 1 lemon (about 3 tbsp)
2 Tbsp (30 ml) capers, drained from their brine
Olive oil, salt, black pepper

METHOD
