Spicy Vegan Red Curry Dumpling Soup 🍲 🥟🌶️🔥
1 tbsp olive oil 2 garlic cloves, minced 1 inch ginger root ½ cup finely chopped onion 1/4 cup panang curry paste or red curry paste 2 tbsp Calabrian chile paste or chili-garlic sauce 1/2 cup coconut cream 2 cups low-sodium vegetable broth 2 cups spinach 1 (16oz) package silken tofu 12 vegetable potstickers 1 bunch green onions 1. To a medium pot over medium heat add sesame oil. Add the garlic, ginger and onion and saute for 3-4 minutes until softened. 2. Add in the chili sauce and curry paste and stir to combine. Add the coconut cream and broth and stir well. Let simmer for 5 minutes. 4. Stir in the spinach and cook until wilted, about 1 minute. 5. Take the soup off the heat and stir in the silken tofu and cooked dumplings. by @ourhealthy_kitchen

Easy French Chocolate Muffins Recipe
2 cups All Purpose Flour 1 cup Granulated Cane Sugar 3/4 cup Cocoa Powder 1 tsp. Baking Soda 1/2 tsp. Fine Sea Salt 2 cups Chopped Milk Chocolate, or semisweet 2 large Eggs + 1 Egg Yolk 3/4 cup Plain Greek Yogurt 1/3 cup Olive Oil 3/4 cup Whole Milk 2 tsp. Vanilla Extract 1/2 cup Chocolate Ganache 1/3 cup Heavy Cream 2 oz. Semisweet Chocolate, finely chopped. Preheat oven to 425F. Bake for 5 minutes at 425F, then keep the oven door shut and reduce heat to 350F to cook an additional 15-20 minutes, until tops are set. A toothpick inserted into the center should come out clean or only with fine moist crumbs. Optional: - coat the tofu slices lightly in corn flour for a more crisp and golden texture. - If using silken-firm tofu, it is recommended to wrap the block between kitchen towels (placing a small saucepan on top). Let it sit for 10-15 minutes or so to drain out the excess water. Then pat tofu dry with clean kitchen towels and slice it. Remove the tofu and set aside. In the same pan, stir in: - 1 tbsp sesame oil - 1/2 onion, sliced - 3-4 cloves of garlic , minced - Knob of ginger, grated - 1-2 tbsp red curry paste (let me know if you want my homemade paste recipe) - 1-2 tbsp sriracha/ hot sauce Stir it together and once fragrant, add 250-300 ml coconut milk , then stir in: - 1-2 tsp brown sugar - 1-2 tbsp light soy sauce By @the_foodiediaries

Healthy PASTINA SOUP AKA “ITALIAN PENICILLIN”
PASTINA SOUP AKA “ITALIAN PENICILLIN” INGREDIENTS: - 1 box of organic chicken bone broth @kettleandfire - 4 cups of water (to submerge veggies) - 1 yellow onion - 4 large carrots - 4-6 large celery stalks - 3-6 cloves of garlic - Pastina pasta (little stars) @barilla - FOR SERVING: Top with extra virgin olive oil, grated Parmesan, salt and pepper to taste - *optional* tbsp of bullion to the broth to add more flavor. In a large pot add your bone broth, whole onion, whole carrots, celery, and garlic. Bring to a rapid boil for 45 minutes until the veggies are nice and tender. Then scoop out those vegetables directly into a blender or food processor, add about 3 ladles of broth to that and blend until smooth. Add this back into your stock pot and this becomes your broth
