Mine is Bulgarian style called “kozunak.” I share it here always this time of the year, and I’ll be making it again for Orthodox Easter in May. This time I made it with my pasta madre, which I wanted to test. But you can make it with a regular stiff starter made from your liquid one, sweet or not. I’ll share the recipe with a sweet starter: For the sweet starter: 35g active starter(100% hydration), 70g water, 150g flour, 20g sugar. Knead well and let it ferment overnight(10-12h at 75F). For the first dough: 180g from the overnight stiff starter, 200g flour(I used panettone flour, you can use Manitoba or bread flour), 100g milk, 40g sugar. For the sweet starter:
35g active starter(100% hydration)
70g water 
150g flour
20g sugar
Knead well and let it ferment overnight(10-12h at 75F)

For the first dough: 
180g from the overnight starter 
200g flour(I used Manitoba)

40g sugar
Knead well and let it ferment at 75F for 8-10h or 4-5h at 83F. It should more than triple in size, look for that, it’s important.
