INGREDIENTS:

1 tbsp olive oil
1 shallot, diced
6 oz fresh spinach
2 – 5.3 oz packages Boursin garlic & fine herb cheese
4 oz mascarpone
½ tbsp dill
1 lemon, juiced and zested
1.75 – 2 lbs salmon, boned & skinned
1 tbsp Dijon mustard
1 tsp smoked paprika
1 tsp Green Goddess seasoning (I used Trader Joe’s)
2 sheets frozen puff pastry, thawed (I prefer Pepperidge Farm but using Trader Joe’s here)
1 egg white (for egg wash)
