Oh wow, this is by far my favorite applesauce I have made. It had a nice tart flavor to it with a subtle sweetness. I just could not get enough of this applesauce. When making applesauce I always leave my peels on and puree the applesauce so I still get the nutritional value from the peel. Leaving the peels on will make this applesauce more tart than if you were to peel the apples. If you are not a fan of tart flavors you will want to peel the apples first.
