Because there are several different types in the family (hydrangeaceae) but each one requires slightly different pruning. It’s so irritating that they’re all called hydrangeas and I feel your pain if you are a little unsure what you’re dealing with. In comments on one of my most recent posts there were people who said that they cut theirs down to the ground each year and still get a lot of flowers. I suspect they have hybrids, which bloom on the old and new growth. Serratas are like this too (Examples are Blue Billow and Gatspy Star.)
