The recipe is as follows: - 50 grams of flour - 30 grams of grated Parmesan cheese - 30 grams of butter - 30 grams of egg white - teaspoon of mustard powder Mix all the ingredients together in a small mixing bowl or microblender. Spread the batter over your mold; we used our Hazel leaf mold. Once smoothed out, place the mold in the oven at 170 degrees Celsius for about 8 minutes. Remove while still hot; it’s an easy release. I used a hand blender 🙌 🍂 Pour a small amount of batter over a leaf-shaped stencil (or any other stencil of your choice) or tuille mould and using a spatula / scraper, remove any access batter. 🍂 Bake at 170°C for about 5/6 minutes. 🍂 Remove from the oven and carefully lift each leaf from your stencil / mould immediately placing them carefully over a rolling pin to create curved leaf effect.
