Healthier Vegan Cookie Dough Bars by me🍪 I had the goal of meal prepping over the weekend. I only accomplished to make these but I think that’s a pretty solid prep, IMO. Snacks upon snacks is all you need in life. Agree or no? ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Ingredients// - 1/2 cup cashew butter - 1/4 cup maple syrup - 1 serving vanilla pea protein - 1/4 cup almond or oat flour - 2 tbsp coconut flour - 2 tbsp mini dairy-free chocolate chips - pinch of sea salt ⠀⠀⠀⠀⠀⠀⠀⠀⠀ Instructions//⠀⠀⠀⠀⠀⠀⠀ 1. In a large bowl, combine the ingredients except for the salt with a wooden spoon or spatula. 2. Press the dough into an 3x5 dish and top with flakey sea salt. 3. Chill for an hour before cutting into 5 bars. 4. Keep in an air tight container in the fridge for up to 5 days.

Peanut Protein Fudge 🥜 I loved my last round of fudge so much that I had to make another round. This time with zero added sugar 👏 Ingredients: • 1/2 cup crunchy peanut butter • 5 tbsp coconut oil, melted • 1 1/2 serving vanilla pea protein - don't skip this! • 1/4 cup peanuts • Pinch of sea salt Instructions:⠀⠀⠀⠀⠀⠀⠀⠀⠀ • Combine all of the ingredients in together in a medium sized bowl. In a small rectangular dish of choice (I used a 6x3), add a piece of parchment paper before pouring the mixture in. • Place the dish in your freezer for about an hour. • When ready to eat, let the fudge sit on your counter for about 15-20 minutes and slice it into however many pieces you’d like. • To store, keep the cut fudge in an air tight container placed in your fridge until ready to eat
