We have three dishes left from the @fermipasta series; they’re all slightly more complex, so figured I’d elaborate here.

Ravioli with two fillings:

- Lamb shoulder, roasted until golden brown, then braised in balsamic vinegar for 4-5 hours until soft. Tear apart while still hot and shave lots of Parmesan into the mix. (This half is rich and acidic.)

- Polenta, cooked in chicken stock with a little cream, rosemary, and bay leaf, whisked aggressively for 12-14 minutes. (This half is sweet and loaded with herbs.)

The pasta is the same dough as usual, freshly ground wheat and lots of egg yolks. Shaping the ravioli this way makes the contrast between both fillings really pop in ways that would be lost if you combined them.
