Whipped cottage cheese mousse
1 cup cottage cheese
2 tbsp natural peanut butter 
2 tbsp honey
Touch of Himalayan pink salt 
2 tbsp chocolate chips (your favorite, Lily brand is great)
Chopped peanuts and chocolate chips for the top - optional 
Add the cottage cheese to a food processor and blend until completely smooth. Add in the peanut butter (I melted mine for 30 seconds in the microwave first) and add the honey and salt. Mix again until well combined.
Split the mixture between 2-4 bowls.
