Polenta Croutons—Preheat oven to 400F. Square off sides & ends of an unwrapped polenta log, then cut into 1 to 1 1/2-inch cubes. Toss cubes lightly in a bowl w/olive oil, coarse salt & pepper + anything else you like (such as parmesan, fresh herbs or chili flakes).
