RECIPE VIDEO ABOVE. This is the broccolli version of Cauliflower Cheese! Tender broccoli smothered in a creamy garlic-parmesan cheese sauce which is pretty much the one I use for everybody's favoure Mac and Cheese. It's nice and saucy, rather than being stodgy and so thick you can cut into it like cake, so there's extra cheese sauce to spoon over once served.

- 1 lb pasta of choice
- 5 to 6 cups of chick broth
- 1/3 cup sun-dried tomatoes plus oil
- 1 lb chicken breast
- 1 tbsp butter
- 1/2 yellow onion, diced
- Salt and pepper to taste
- Paprika to taste
- Oregano to taste
- Tony Chachere's Creole seasoning to taste
- 3-4 cloves garlic, minced (or to taste)
- 2 cups of he cream
- 1 to 2 cups of coo broccoli
- 2 handfuls of fr spinach
- 2 cups of gra Parmesan cheese
- 2 cups of shred mozzarella cheese
- 1/2 cup pesto
- Fresh parsley, chopped (for garnish)

**Instructions:**
1. **Preheat Oven**: Preheat your oven to 350°F (175°C).

2. **Cook Chicken**: In a large oven-safe saucepan or Dutch oven, heat about 1 tablespoon of sun-dried tomato oil over medium heat.
