I was absolutely craving some fast food after the weekend shenanigans (💃🏽) but didn't want anything too heavy so compromised and made this crispy fried eggplant in a sweet sticky soy garlic sauce. If you've never tried deep fried eggplant you are missing out - when done right it is super crispy on the outside but deliciously soft and buttery on the inside. The trick I've found is to a) salt the eggplant heavily beforehand to draw out moisture and add more flavour b) use a combo of flour/cornstarch/potato starch to make sure the dry batter sticks properly and c) making sure you fry this at high heat! ANYWAY give this a bash the next time you get your hands on some 🍆
