1) Pasteurize your eggs!! Often tiramisu is made by just whipping eggs and sugar, so you’re technically eating raw eggs. Use the syrup method and not only it will be 100% safe to eat, but more delicious!

2) Once your Zabaione (yolks+sugar) is ready, add it to the mascarpone and not viceversa. That’s how you can control the density and thickness of your cream!
