Jerk Turkey Recipe!

1 whole Turkey
Salt
Jerk Seasoning 
Jerk Marinade
Creole Butter

Spatchcock the turkey.
Cut the backbone of the turkey the flip over and crack the breast bone this will cause the turkey to lay flat and cook evenly. 

Pat the Turkey Dry then season with salt and Jerk Seasoning. Coat the turkey in Jerk Marinade then let it sit in the fridge for 24 hours  Then inject entire turkey (Breast , legs, thighs, wings) with Tony’s creole butter. 

Heat your smoker to 275 degrees I used apple Place a temperature probe in the thickest part of the breast. 

Heat up butter and Jerk Marinade and  use this to drizzle over the Turkey every hour. After the Bird gets to a color you like loosely place foil Jerk Turkey Wings, Jerk Turkey, Jerk Marinade, Whole Turkey, Jerk Seasoning, Smoked Turkey, Turkey Breast, Home Chef, Beautiful Dishes

A wonderful detour from the usual Christmas glazed ham recipes, courtesy of Jamie Oliver...but certainly not limited to just the Christmas period!! Don't be put off from the seemingly never ending list of ingredients...it's actually very simple, and really delicious. I have actually made just the jerk marinade and used it on a smoked ham,skipping the poaching step and the results were still delicious.
