Pat turkey dry. Season: Rub butter under and over skin. Season with salt, pepper, herbs. Fill: Stuff cavity with lemon, garlic, onion. Roast: Place on rack in pan with veggies around. Cover with foil. Bake: Roast 2.5-3.5 hrs, basting. Remove foil last 30 mins for crispy skin. Finish: Rest 20 mins before carving.
