Vegan Quinoa and Kale Salad  Ingredients: - 1 cup quinoa - 2 cups water - 1 bunch kale, chopped - 1 large carrot, grated - 1 red bell pepper, diced - 1/4 cup sunflower seeds - 1/4 cup dried cranberries  Dressing: - 3 tbsp olive oil - 2 tbsp lemon juice - 1 tbsp apple cider vinegar - 1 tsp Dijon mustard - Salt and pepper to taste  Instructions: 1. Rinse quinoa and cook in water over medium heat for 15 minutes. 2. In a large bowl, combine quinoa, kale, carrot, bell pepper, sunflower seeds, and cranberries. 3. Whisk dressing ingredients until emulsified. 4. Pour dressing over salad and toss well. 5. Serve immediately or chill for 30 minutes. Enjoy!
