This Christmas cake is full of my favourite Christmas spices and gives this cake such a delicious flavour. This cake is booze free but you can make it a boozey one by adding booze to the mixture and afterwards when the cake is warm. I have been making this same Christmas cake for years. It always turns out beautifully moist and is filled to the brim with lots of lovely fruit. This needs to be started the night before so make sure you plan ahead. I always like to make my cake a 5 to 6 weeks before Christmas so that it has time to ripen. Do note that you will have to start the night before by macerating the fruit in either brandy or fruit juice. (Orange is good.) This helps to plump up the fruits.
