Slice eggplant in planks. 

Drizzle olive oil, salt and pepper and roast at 425 for 15-20 min until browned. 

Place on a plate and add sliced cucumbers, cberry tomatoes, grated  hardboiled egg, schug and tahini. 

Top with fresh parsley, mint, sumac and pickled onions if you have. 

Tahini 

1/4 cup raw tahini 
2 cloves minced garlic
Juice of half lemon
1 T amba
1 tsp maple syrup 
2 T water 
Salt and pepper to taste

Ingredients-
3 baby eggplants
4 tablespoons of olive oil
