The strawberries here are super sweet so I didn't need to add very much sugar for it to be the perfect flavor and using a no sugar/low sugar pectin got my jam set perfectly!

Consider keeping the jalapeno seeds and membranes, otherwise the results will be good, but mild. Also, remember to use disposable latex gloves when handling peppers. With the month of May comes the strawberries and rhubarb here in Hickery Holler. This is actually the second picking of rhubarb. Remember I canned rhubarb in jars a few weeks ago.
