Taiwanese sesame oil chicken soup (麻油鸡汤, ma you ji tang) is a traditional Taiwanese dish with sesame oil, ginger and rice wine. My husband 's family is from Taiwan, they love sesame oil chicken soup a lot. The simplest version is to only use chicken as the main ingredients, sometime I add veggies, tomato and mushroom to enrich it. We like chicken lover a lot, so I use a small amount chicken love. The nuttiness from the sesame oil and tender chicken is so comforting to me. Serve this with rice or noodles to make it a full meal!

Ingredients:
6-8 chicken drumsticks (about 2.5 lbs)
4 cups water
2 cups Taiwanese rice wine
4 tbsp toasted sesame oil (I used @yunhaishop white sesame oil)
8 small dried shiitake mushrooms, rehydrated
2 inch piece ginger, thinly sliced
1 packet spice mix (optional)
2 tbsp dried goji berries (sub with small chunk of rock sugar)
Salt to taste

Serve with:
scallion garnish
rice or noodles

Method:
Rehydrate mushrooms by submerging in hot water for 30 mins.
In a large pot, add sesame oil and Wine Mushrooms, Sesame Oil Chicken, Dried Goji Berries, Chinese Soups, Toasted Sesame Oil, Rock Sugar, Chicken Soup For The Soul, Taiwanese Food, Shiitake Mushrooms
