2 lb Yukon gold potatoes
1/2 tbsp olive oil
1 tbsp taco seasoning
1 tsp salt 
➡️ bake at 425 degrees for 32 minutes, shake halfway, broil for 1-2 minutes

1/2 tbsp olive oil
2 lb lean ground beef
1.5 tbsp taco seasoning
1 tsp salt
1/2 cup beef broth
1/4 cup diced green chiles
1/4 cup nacho cheese
1/4 cup reduced fat Mexican cheese

Assemble with ⬇️
1 cup corn
1 cup black beans 

Top with ⬇️
12 tbsp lite sour cream (2 tbsp per bowl)
