Recipe sourced from “How to Cook That”. 300g sugar, 200g glucose syrup, 75ml water. Combine in saucepan and heat to 150o “crack” temperature. Add colour / flavouring. When bubbles subside, pour over a water inflated balloon ( dry and lightly coated in oil) that is standing in a glass. When set, cut tiny hole to deflate balloon. Handle carefully and store in airtight container until being used.
