Ingredients Cake - 375g fresh filo pastry, at room temperature - 185g caster sugar - 4 eggs - Finely grated zest of 2 oranges - 1/2 orange, thinly sliced - 1 tsp vanilla extract - 125ml extra virgin olive oil - 125ml grapeseed oil - 250g Greek yogurt - 2 tsp baking powder Syrup - 220g caster sugar - Juice of 3 oranges (850g total) - 1 cinnamon stick - 375ml water To Serve - Vanilla ice cream - Orange zest - Fresh mint Method 1. Combine all syrup ingredients in a large saucepan, stir until the sugar dissolves. Bring to a boil, then simmer for 10 minutes until slightly thickened. Set aside to cool. 2.
