As a former vocal egg-salad-skeptic, I’ve now been converted. This type of sandwich is brighter and fresher, it’s not weighed down by mayo and it’s a variation on a classic. It’s light, it’s refreshing, it hits the spot every damn time. I’m not sure why I’ve hyperfixated on it, but I realized how perfect of a base it was to play with different flavors. This one is inspired by my partner and I’s Korean-Middle Eastern heritage— and how beautifully the flavors pair despite their distance. Uber creamy. It makes a fabulous brunch sarnie or easy lunch. Enjoy x JGS Serves 1 3 large free range eggs 2 tbsp mayonnaise 2 tbsp full fat yogurt 2 spring onions, finely chopped A small handful of finely chopped chives Bread of your choice to serve Finely chopped lettuce to serve Salt 1.
