Ereka Vetrini on Instagram: "For episode 6 of ITA-LEAN, I’m sharing my recipe for CRISPY BAKED CHICKEN CUTLETS! I chose to bake them in the oven verses the airfryer so that I don't exclude anyone. 

Chicken & Marinade:
1¼ lb thinly sliced chicken cutlets
3 tbsp olive oil 
3 tsp lemon juice
½ tsp salt
¼ tsp pepper

Seasoned Breadcrumbs:
1¼ cup panko breadcrumbs
½ cup grated parmigiano reggiano
½ tsp salt
¼ tsp pepper
½ tsp garlic powder
½ tsp onion powder
2 tbsp dried parsley
 
Everything Else
1 ¼ cup Non-Fat plain Greek yogurt
½ tsp salt
¼ tsp pepper
1 tbsp milk
Olive oil spray

-Preheat oven to 400F Convection Bake
-To marinade the chicken, add 3 tbsp olive oil, 3 tsp lemon juice, ½ tsp salt and ¼ tsp pepper to a large bowl. Mix well then add your chicken. Ingredients:
1 pint of cherry tomatoes
8 ounces of sliced mushroom
1/2 bundle of broccolini florets (I saved the stems for an omelette)
1 small onion diced
1 tsp fresh or dry rosemary
1 tsp fresh or dry thyme
3/4 tsp salt
1/4 tsp pepper
2 Tbs olive oil
1lb orzo uncooked
3 cups of veggie broth
3 ounce grated parm
3/4 cup shredded mozzarella

-Preheat oven to 400F
-To a 9x13 baking dish, add tomatoes, mushrooms, broccolini, onion, rosemary, thyme, salt, pepper and coat with olive oil.
-Cook in oven for 15 min.
-Remove from oven, add orzo and broth. Mix well, cover with aluminum foil and return to oven. 1 medium spaghetti squash
2 tsp olive oil
¾ cup greek yogurt  or sour cream
2 tbsp parsley
1 bundle chopped scallions
½ tsp onion powder
½ tsp salt
¼ tsp garlic powder 
¼ tsp pepper
¾ cup low fat cottage cheese
½ cup shredded parm

-Preheat the oven to 400F
-Cut the squash In half widthwise and deseed. Brush with olive oil and place, cut side down, onto a parchment lined baking sheet. Roast for 30 minutes
