This is called the Aliquot method, and you can use basically any tiny jar to do this (if you use a clear glass jar you can just mark the starting line and wait until it’s almost doubled in size, same as what you would do for your sourdough starter). The purpose of this method is being able to see exactly how much your dough has risen since it’s hard to tell when a large bowl of dough is doubled in size just by looking at it. I also like this because when you stretch and fold your dough you are slightly deflating it, so it can be hard to know how much rising goes on during that time.
