I came across this recipe for roasted bronzini on Epicurious.com when searching for dishes suitable for Easter or Passover, and I fell in love the minute I saw the ingredient list. Bronzini, also known as branzino, Mediterranean seabass and loup de mer, is a medium-sized, flaky, flavorful but not overly-fishy fish, similar to a red snapper. It's one of my favorite fish to prepare and consume.
