Catfish-House Green Tomato Pickles 2 quarts quartered green tomatoes 2 cups chopped onion 1/3 cup chopped hot peppers 1/3 cup chopped sweet red bell peppers 2 cups sugar 3 Tablespoons salt 3 cups apple cider vinegar 1 teaspoon celery seed 1/4 teaspoon yellow mustard seed  Combine ingredients in a large cooking pan and bring to a slow boil. Let simmer for about 5 minutes. Put in jars and process for 15 minutes in water bath. These are best after the flavors have matured, about 2 weeks or more.
