47K views · 6.3K reactions | Low Carb Mexican Breakfast Casserole (Don’t judge my appearance - I had been out shoveling snow just before this ❄️☃️🤪) This recipe was a staple in my 70 lb weight loss journey and the bonus is my whole family loves it too. It’s a low carb Mexican Breakfast Casserole but we usually eat it for dinner. Start with browning 1 lb of breakfast sausage and then add 1 package of taco seasoning OR I like to use 3 tbsp of Flavor God’s Taco Tuesday as it has zero sugar. Next combine 7 eggs and ½ cup of heavy whipping cream and beat well. Spray or grease your casserole dish and then pour the cooked sausage in it and spread out evenly. Next top with a very well drained 10 oz can of Rotel. This is really important otherwise your casserole will not set up well and it will be soupy. Also, if you are more carnivore, leave the Rotel out. Then pour your egg mixture on top and lastly add your shredded cheese. If you want to avoid fillers, be sure to shred your own cheese. This is gonna bake a 375 degrees for 30-35 minutes When it comes out, let it sit for a few minutes then cut and serve. I like mine with some sour cream and salsa. If you want a lifestyle you can stick to, keep it simple. Sustainability is important. Recipes like this help me stay on track and feel satiated. Here’s the recipe: Homemade Buttermilk Caramel Syrup 3/4 c buttermilk 1 1/2 c sugar 1 stick butter 1 tsp. baking soda 1 tsp. Vanilla Combine buttermilk, sugar, butter, and baking soda in a large pot. Like one you’d make soup in. Yes you’ll have way more pot than ingredients, but this will boil all over your nearly clean stove if you put it in a smaller sauce pan. Bring ingredients to a boil and reduce heat to low. Cook, stirring very frequently for about 10 minutes. You’re basically making candy so you need to stir consistently. You want to cook until it’s a dark amber color, remove it from the stove and add vanilla. You can can this or place in the fridge for long term storage.
