This is one of my favorite ways to prep chicken, and it’s as easy as it gets. Prep takes just minutes and you can pair it with an easy corn salsa, my homemade sauce and your fav base (I used my high protein Kaizen Spanish rice with 20g protein), and you have a high protein meal.

Here is how to make it:

1 Start with 3 lbs boneless chicken thighs. Trim off any excess fat and add to a bowl.

2 Season the chicken with a few generous pinches of salt & pepper, 2 packets taco seasoning, 1 tbsp olive oil, 2 tbsp adobo sauce (from canned chipotle peppers), and the juice of 2 small limes.

1. 4 pieces bone in chicken thighs 
2. 2 tablespoons plain Greek yogurt 
3. 1 heaping tablespoon tomato paste 
4. 1/2 teaspoon salt and black pepper 
5. 1 teaspoon garlic powder, paprika, chili powder, cumin , oregano 
6. 1 tablespoon olive oil 
7. Massage into chicken both sides. 
8. Air fryer or oven bake at 400 degrees F for 15 minutes and then flip for 10 minutes. You can flip it back for the last minutes if you like. 

Cilantro lime rice 
1. 2 cups rice and 4 cups water in the rice cooker 
2. After rice is cooked . Add juice of 1 - 1.5 limes 1.5 teaspoons salt and 1/2 chopped cilantro. 

Avocado Crema 
1. 1  cup cilantro 
2. 1 avocado without skin and seed 
3. 1 jalapeño
