The candied glass poached pear, a pâte sucrée, fig and spiced pear brunois, Creme patisserie and lastly meringue, torched with edible purple flowers. Bae says this is beautiful but the taste was even better. Crystallized fruit is usually very straight forward but of course I wanted to make these pears extra special for Bae. Poached in the most delicious spiced pea flower tea, then thinly sliced and dehydrated. The last step is candying the slices by taking the sugar to the right temperature and working quickly before it dries and gets too sticky.
