6-7 plum tomatoes, sliced
2 cup shredded mozzarella
Grated parmesan
salt and pepper
red chili flakes
2 large handfuls fresh baby spinach
1 bunch fresh basil, sliced
Egg wash (1 beaten egg mixed with 1 tbls water)
Pesto oil (recipe to follow)

1 sheet puff pastry (275 g)
400 g asparagus
3 tbsp crème fraîche
100 g mozzarella grated
125 g mozzarella balls
50 g Parmesan shaved
A handful of cherry tomatoes
1 small red onion
1 egg yolk for greasing the edges
2 tbsp sesame seeds (for the edges
3 tbsp honey
Salt to taste

INSTRUCTIONS
Preheat your oven to 180°C (356°F).
On a clean and lightly floured surface, roll out the puff pastry. Transfer it to a large baking sheet lined with parchment paper. With a sharp knife, lightly score a 2 cm border around the edges of the puff pastry.
