Happy STS! How do you work through structuring your plot?

First of all, I must say that pacing is my NEMESIS. I always feel like I’m rushing things or adding too much filler, but that’s neither here nor there.
Structuring is fairly easy for me. I have ideas of where I want the story to end, and I add in-between scenes as I come up with them as kind of roadmarkers of where I want/need to go. So in my current story, I know I need to escalate to a big storm, which means I have to build it up with other weird weather patterns. That sort of thing.
