Got this recipe from my Bulgarian mother-in-law (took notes while she made it, and have made it since). This makes a lot, so feel free to halve it - I often do, but it also freezes really well. It's a day's project, but well worth it - we love the combination of the lemon zest and the rummy raisins in this fresh bread. For the sweet starter:
35g active starter(100% hydration)
70g water 
150g flour
20g sugar
Knead well and let it ferment overnight(10-12h at 75F)

For the first dough: 
180g from the overnight starter 
200g flour(I used Manitoba) 
100g milk
40g sugar
Knead well and let it ferment at 75F for 8-10h or 4-5h at 83F. It should more than triple in size, look for that, it’s important.
