Aloo Parathas for beginners 
 
Ingredients
2 large potatoes, washed and scored (see video)
1tbsp ghee
1tsp cumin seeds
1tsp crushed coriander seeds
1 small onion, chopped finely 
1tsp ginger paste
Green chilli paste to taste
1/2 tsp turmeric powder
Chilli flakes to taste 
Splash of hot water 
Sea salt
Handful of chopped fresh coriander, dill or parsley
1 heaped tsp chaat masala
 
The dough 
100g plain flour
100g atta (chapati flour)
180ml lukewarm water 
Ghee for basting
 
Method 
Score each potato (see video) and place in a saucepan of cold water, then bring to the boil. 
In the meantime, place a sauté pan on a medium heat, then add the ghee, cumin, coriander seeds and the chopped onion. Sauté for 1 minute.
