With the majority of my recipes requiring the use of plain flour with the addition of baking powder + baking soda I tried using self raising flour instead, this is what I discovered and some of the reasons why I now only use Plain flour 🙌🏼

💫 Self raising flour in Australia is generally packaged in paper bags which can sometimes allow moisture to get in. Once the moisture gets in your self raising flour it can deactivate your raising agent causing your cakes not to rise.

The recipe is below:- Marble Butter Cake Ingredients:- 160g room temperature unsalted butter. 1/2 tsp salt 120g sugar 3 eggs (50-55g ) (150g total) 150g cake flour (can replace with self raising flour and omit the baking powder) 3g baking powder 30ml full cream milk (liquid)
3 tsp of cocoa powder + 1tablespoon milk
* pan size: “18x10x7cm” 7x4x3” (I used 7×3.5×3”) – smaller pan produce cracked cake. Instructions:
1. Cream softened butter with sugar and salt until pale and smooth.
2. Add all the eggs at once and cream well until fully incorporated into the butter mixture.
