This Cantonese-style quick and easy clay pot rice is full of flavor and comes together in only 30 minutes! ⁣

I start by soaking jasmine rice and dried shiitake mushrooms overnight. Brush oil on the bottom of your clay pot and add the drained rice.⁣
 Pour the mushroom water in and you want to add enough just so that it is slightly above the rice. ⁣
Cover and let that cook over medium heat and once the rice is semi-cooked, add sliced Chinese sausage, shiitake mushrooms, and let that cook for a few minutes. ⁣
Drizzle sesame oil over the lid. ⁣
