Ingredients  New York strip steak Salt and pepper to season it Tablespoon butter 1 sprig rosemary 1 crushed garlic clove  Sauce Fat caps of steak to render 1 teaspoon whole black peppercorns  1/2 white onion minced or use shallots if you fancy  1/8 cup cognac 1/2 cup beef broth @kettleandfire  Handful shredded parm (not traditional but tasty) 1/4 cup heavy cream Salt to taste Dash of Worcestershire   Start by trimming excess fat off the steak and set aside. You will render this down in the sauce.
