You can make this eggplant panini whether you have a panini press or not. I'll explain how to make this grilled eggplant sandwich using a skillet or a grill pan. The key is weight to smush it all down into a panini. This is like a grilled cheese stuffed with eggplant, hummus, basil and mozzarella cheese.
