I've written what I did below - enjoy! INGREDIENTS (makes 4) 8 nori sheets (2 per sandwich for stability) 4 tbsp sushi rice Handful of: radish, pickled red cabbage, avocado, cucumber (all sliced) 1 block firm tofu 4 tbsp cornflour 4 tbsp Teriyaki / sauce of choice Vegetable oil Salt Pepper 4 tbsp mayo 1 garlic clove 1 tsp chilli sauce cling film 1. Cook your sushi rice according to packet instructions. 2. Chop the tofu into 1cm thick slices. Coat in cornflour, then fry in hot veg oil until crispy on each side (3-5 mins) 3.
