This pull request prepares the release of version 1.2.1 of the SDK.

✅ Changes

  1. Chore: Updated the Bellecour subgraph URL to point to https://thegraph.iex.ec.
  2. No logic changes, only the subgraph endpoint has been updated.
  3. Version bumped from 1.2.0 to 1.2.1.

1.2.1 (patch update)
