My absolute favourite meal! My favourite thing about this dish other than the obvious fast that it’s incredibly delicious is that whether you’re making it for 2 people or 20.. it’s just about the same amount of work!

Chicken:
3-4lbs bone-in chicken
2 large onions, sliced
1/4 cup neutral oil
1/2 cup passata or crushed tomatoes
4 tsp salt
2 tsp cumin seeds
2 tsp cardamom pods
2 tsp black peppercorns
1 tbs whole cloves
3 bay leaves
2 cinnamon sticks, cracked in half

Heat up the oil in a large pot and sauté onions until browned. Add the wholes spices and sauté for 2 mins until the spices become fragrant. Add the chicken and cook for 3-4 mins until it begins to brown slightly. Then add enough water to fully submerge the chicken. Chicken Kabseh, Sauté Onions, Cardamom Pods, Bone In Chicken, Chicken Meals, Cumin Seeds, Bay Leaves, Saute Onions, Crushed Tomatoes
