When working with a ganache, I find that working with the cold/frozen cakes is usually the best route because it will set up faster. And when you go to freeze again after decorating, there is a very low chance that it will have any condensation happen. (Which is really nice especially going into the warm summer).   To make the black ganache, I made my semi sweet chocolate ganache, and let it cool off for about an hour. I also put it into the fridge to cool it just a bit more before using. I transferred the amount to a liquid measuring cup and used @Chefmaster “Coal Black” color. Mix well until combined. First, I have to admit that I’m no expert at pouring ganache. I’ve only done it twice as a matter of fact. But I learned a few good tips along the way and wanted to share them with you. I had a few missteps my first time (which is the subject of this post), which I discuss below. Hopefully this will help you all do it right the first time. ✅ 700 gms Heavy cream, 35% fat
✅ 600 gms Dark chocolate, roughly chopped
✅ 800 gms Milk chocolate, roughly chopped
✅ 75 gms Butter (Optional)

Note:I use both milk and dark chocolate for my cakes to achieve a balanced sweetness and bitterness.

Instructions:👇🏻

1: Gather and measure all ingredients.

2. Place chocolate in a medium mixing bowl.

3. Heat cream in the microwave for 1 - 2 mins, watching carefully to prevent boiling over.

4. As soon as the cream comes to a boil, pour it over the chocolate in the mixing bowl. Whisk until the chocolate and butter have melted and the mixture is smooth.
