Feeds 4

2 tablespoons extra virgin olive oil, plus extra to drizzle 
1 brown onion, chopped
1 banana pepper, sliced 
2 garlic cloves, sliced 
1 tablespoon dried oregano 
400g tin Roma tomatoes, crushed 
¼ fresh oregano leaves 
10 large prawns, peeled, tails attached ( leaves the heads and shells to make a stock)
70g Greek feta, crumbled
Charred bread to serve 

Heat the oil in a large saucepan over medium heat and cook onion, peppers and garlic for 8-10 minutes until softened. Add the dried oregano, followed tomatoes, 80ml (⅓ cup) water and simmer for 15 minutes until thickened. 

Preheat the oven to 250°C grill. 

Place the prawns over the sauce, scatter with feta and a drizzle of olive oil.

Ingredients:

1 pint cherry tomatoes
3-4 peeled garlic cloves (use more or less depending on the flavor hummus you use)
1 cup hummus
1/2 tsp dry basil
1/2 tsp dry oregano
1/2 tsp dry rosemary
2-3 tbsp olive oil
8 oz of dry pasta
1 cup reserved pasta water
1/3 cup sun-dried tomatoes, sliced into strips
3 tbsp nutritional yeast
5-6 fresh basil leaves, cut into strips
Juice of half a lemon
Salt and pepper to taste

Instructions:
Preheat the oven to 400F, then in a large baking dish, add in your cherry tomatoes, garlic cloves and 1 tbsp of olive oil and toss to combine.
