Traditionally, œuf cocotte is a baked egg dish but this one by @jacquespepinfoundation uses steaming for the gentlest cooking. I made a twist to his original steamed egg recipe by adding some Japanese chawanmushi-inspired flavors. The steaming makes the egg taste like a decadent custard topped with the umami from the tobiko fish roe. Silky steamed egg custards are a traditional dish found in many Asian cuisines.
